

My participation in the All About Café section in Thessaloniki, from March 1 to 3, 2025, was an excellent opportunity to showcase technological innovation within our industry. As part of the project “Designing Flavor with Zero Limits,” I presented how the use of Artificial Intelligence (AI) is transforming the roasting process by introducing new tools for data collection and analysis, variable monitoring, and predicting coffee behavior throughout roasting.
The discussion around controlling and shaping flavor through technology confirmed that modern foodservice and specialty coffee production are moving toward a model where knowledge, technology, and digital precision redefine the boundaries of quality. It was a three-day experience filled with meaningful education and the exchange of ideas with professionals who actively invest in the evolution of specialty coffee.
